Personally, I agree with the idea of not having Dwarves, Halflings and Elves as player-characters in a Dragon Warriors game for the reasons laid out by Dave Morris. but even as NPCs, this deserves thinking about.
In my game, any Dwarves encountered are likely to have axes rather than swords (I'm a traditionalist) but I wouldn't stop them using two handed swords of particular Dwarven design with basically the standard stats - I'd have them as broader and somewhat shorter than a human two handed sword, but with equivalent armour penetration and damage statistics.

To me a Dwarf would be more likely to use a crossbow, and I'd treat that as standard. I might let them have faster loading ones, so they only miss a round while reloading.
