I don't know. Maybe the process can be shortened by some natural affinity, animal empathy. Maybe the guy doesn't fit so well in human societies but naturally knows all the body language and gestures that can easily be understood by animals. Perhaps the guy's focus depends on the time he invests in bonding with animals, which accelerates the training. Also the process being faster with smaller (useless) rodents who are useless as compared to large animals that can offer labour and possibly damaging wounds. We have information on horses and the lethal kicks and bites, which I don't see happening with riding horses unless you attack them directly.

And maybe for those who manage to keep animals for a long period, like an 8th rank animal handler having 8 dogs or wolves, pretty nice for taking out unarmoured foes.

Its a variation. As much as a sorceror might build up an army of skeletons, and cover them in plate to hide their status, this profession can build up pets and make use of their enhanced perception of a saber tooth and all. And with a decent cover as an entertainer, they might even manage moving into castles with all their followers.
